smores brownies



i made these for the Cookies for a CURE bake sale this past weekend and they sold pretty well. really, what is there not to like about the combination of smores and brownies? kind of sounds like heaven a little bit, i think. i took the graham cracker and marshmallow instructions from this recipe and the brownie instructions from this recipe and combined the two to make magic.

ingredients:


graham cracker crust:
6 tbs unsalted butter, melted
1 1/2 c crushed graham cracker crumbs
2 tbs sugar
pinch of salt

brownies:
1/2 c flour
1/3 c cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1/2 c (1stick) butter, melted
1 c sugar
2 eggs
1 tsp vanilla extract

1/2 bag mini marshmallows

directions:


1. preheat oven to 350 degrees F and place rack in bottom 1/3 of oven
2. line an 8x8 baking pan with heavy foil and lightly butter the foil
3. stir together crushed graham cracker crumbs, melted butter, sugar and salt in a bowl and mix until all of the graham cracker is moist
4. transfer to prepared pan and press in to a solid even layer
5. bake for about 20 min or until it's a golden brown

while that's baking begin making the brownies.
6. in a small bowl combine flour, cocoa powder, salt and baking powder and set aside
7. in a large bowl stir butter, sugar and vanilla together until combined.
8. add eggs and beat
9. add flour mixture and stir until well blended
10. spread evenly over the baked graham cracker crust and bake for about 20-25 minutes or until an inserted toothpick comes out clean
11. pour 1/2 bag of mini marshmallows over the brownies and spread evenly
12. place brownies 6 inches from the top of the oven and broil until the marshmallows toast up. watch carefully because this happens very quickly!!
13. completely cool on rack and once cool, pull the brownies out of the pan using the foil
14. cut and serve!!



tips:

**the first time i made this i put the graham crackers in a bowl and used my fingers to crush it, making a huge mess and my hands really tired. eventually i figured that i could put the graham crackers in ziplock bags and pound them with something heavy. i choose to use a bottle of olive oil. it works great!

** the first time i made this i didn't watch the marshmallows and burnt the top. initially i thought i'd ruined the whole thing, which was really upsetting because i'd just made three layers. but if you remember from burning marshmallows over the campfire, the burned part comes off in once piece pretty easily. so i just pulled off the burned part and re-broiled it until it turned brown. whew!! 

** when you pull the foil away from the brownies, the marshmallows will stick. gently pull the marshmallow apart from the foil with a large knife coated with cooking spray. it works like a charm!
