swedish turkey meatballs

i'm not really sure what drove me to make this. i don't particularly ever have a craving for swedish meatballs. whenever i'm at Ikea, more often than not, the people i'm with want to get the swedish meatballs and i never really cared to get them. anyway, one day i made them for who-knows-what reason and it ended up being pretty damn good if i do say so myself.


meatballs


ingredients:
- 1 1/2 lbs ground turkey meat
- 1/4 c breadcrumbs
- 1/4 milk
- 1/2 onion, finely chopped
- 3 cloves garlic, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbs oil

directions:
1. in a small bowl combine breadcrumbs and milk. set aside
2. in a skillet, heat oil and saute oions until soft
3. add garlic and cook for 1 minute. set aside and let cool slightly
4. in a large bowl combine turkey, breadcrumb/milk mixture, egg, onions and garlic, salt and pepper. use your hands to mix until well combined.
5. form 1 tbs sized balls
6. in the same skillet you cooked the onions in, heat 1 tbs butter and 1 tbs oil over medium heat. cook meatballs until brown on all sides and cooked through.

these turned out to be really moist, however they were more like mini patties than balls.

sauce


ingredients: 
- 2 tbs butter
- 1/2 onion, chopped
- 4 gloves garlic, minced
- 1/4 c flour
- 4 c beef broth
- 1/2 c heavy cream
- salt and pepper

directions:
1. in the same skillet you cooked the meatballs in, saute onions and garlic until onions are just transparent
2. push onions to the side and add 2 tbs butter
3. when melted, add flour and whisk so that it doesn't clump up. cook until flour turns brown.
4. pour in beef broth, constantly mixing so that flour doesn't clump
5. add cream  and mix.
6. bring sauce to a simmer. continue to simmer until desired consistency. add salt and pepper to taste.
