pesto and a pasta salad


one of my favorite flavors in this world is basil. with a ton of extra basil sitting around the house, it was fitting to turn it into a pesto. typically you see pesto made with pine nuts and even walnuts. but since i have hazelnuts in the the house too, i chose to make a hazelnut peso. good thing hazelnut is another one of my favorite flavors.

ingredients:


- 1 c hazelnuts, lightly toasted and skinned
- 2 c fresh basil
- 3/4 c olive oil
- 3 cloves garlic
- salt and fresh ground pepper

directions:


throw all ingredients into a food processor/blender and blend until smooth

so good!!!!!!

now you can't really make pesto and just eat it as is. so i threw together a pasta salad with whatever it was i had in my kitchen that made sense together.

pesto, sundried tomatoes, artichokes and parmesan


cook up some pasta until it's aldente, then toss together with all other ingredients. simple. delicious.
