prosciutto wrapped chicken florentine


i happened to have some left over prosciutto, burrata and parmesan cheese lingering in my fridge, so i wanted to whip up something tasty with all of those ingredients. i also always have frozen spinach around because i love me some spinach smoothies in the morning. so i looked up prosciutto wrapped chicken and what popped up was Rachael Ray's florentine prosciutto wrapped chicken. i adapted the recipe just slightly and the outcome was spectacular.





prosciutto wrapped chicken florentine

ingredients:
- 1/2 box frozen spinach, defrosted
- 1/2 c burrata
- 1/4 c grated parmesan
- 2 cloves chopped garlic
- salt and fresh cracked pepper
- 3 chicken breasts
- 6 slices prosciutto
- 2 tbs olive oil

directions:
1. preheat oven to 400 degrees F
2. wring out defrosted spinach so that there's nearly no more liquid
3. in a bowl combine spinach, burrata, parmesan, salt and pepper
4. butterfly chicken breasts
5. season chicken breasts with salt and pepper
6. fill each breast with a 1/3 the filling
7. flap chicken breasts back over stuffing
8. wrap each chicken breast with two sheets of prosciutto, covering whole breast
9. brush over with olive oil
10. roast for 18-20 minutes or until cooked through



this dish is suuuuper easy and quick too!!
